200 grams of minced pork
300 grams of minced beef
0.5 dl of white bread crumbs
1 dl milk
1/2 onion shopped
1 teaspoon salt
Fine ground white pepper
Mix the milk with the breadcrumbs and allow to swell. Peel and finely chop the onion. Mix all the ingredients in a bowl and stir until smooth. I added some fresh green herbs to the mix.
Roll into round meatballs and place on a platter or cutting board. Soak your hands in water to make it easier to roll the meatballs.
Fry the meatballs in butter in a frying pan. Start by frying at medium temperature and then lower the heat to low and allow the meatballs to be completely cooked through.
Serve em up in classic fashion with mashed potatoes, gravy and “rårörda lingon”.
“Rårörda lingon” is easy to do yourself. Just mix two parts fresh cranberries with one part sugar. Mix sugar and cranberries in a bowl. Stir gently until the sugar has dissolved.
Gravlax (raw spiced salmon)
Tastes great, but I would say it was a bit of a waste with the “gravlax” as the flavour of the salmon disappear in the mix with the other ingredients.
It could possibly been better to use smoked salmon instead as it has a more potent flavour.

But this is not just another Matkasse. I can easily say this is by far the best quality I’ve had out of all Matkasse services that I tried so far. But then of course, this is reflected in the bill. 895kr for 5 dinners serving a family of 4, i.e. 45kr per serving. Not realy a budget alternative, but it comes loaded with fantastic groceries and 1st class meat, fish and poultry, squeaking freash.
So despite the pricey service, this is a no brainer. I say Middagsfrid has no competition in this price range and I’m happy to pay for the quality they deliver.
I predict I’ll keep this Matkasse service for quite a while.
Fresh pasta rolls prepared with spinage and ricotta filling. Pour a little cream in a baking dish and put in the pasta roles. Spread some fresh creme spiced with roasted garlic and thyme on the pasta roll slices. Add a dash of butter on each slice and top them off with fresh ground pepper.
Minced lamb was spiced with fresh herbes and shaped up as skewers on a stick.
Pasta roll slices and Lamb skewers were baked in the oven at 180C (350F) for approximately 15 minutes until they looked amazing.
Serve it up with a ruccola sallad with tomatoes, cucumber and mozzarella.
This is all fine, but add a nice rosé wine and you’ll get some seriously good shit. I settled for a bottle of Boschendal 2011, fantastic!
Oven baked chèvre on a cracker, add strawberries and top with crumbled meringues.
Flying Jacob (Swedish: Flygande Jacob) is a Swedish casserole based on chicken with bananas, peanuts and bacon, covered with whipped cream laced with hot sauce and cooked in the oven.
In checking the supplies I realised there were no bananas…
So asparagus it was, and a bloody fantastic concoction it is, if I may say so.
And as per usual in preparing Flying Jacob, never go lightly with the hot sauce.

Always fun to try out a new food delivery service, and even more so when one of the founders is a good friend and delivers the food in person, not that I would let that cloud my judgement. Looking forward to testing the three dishes included in the bag I ordered.

3. Tsay skewers served with curry sauce and rice
Still looking for a delivery service that caters to us singles, ie that does not assume that you expect three friends to come over for dinner every evening, or that you enjoy eating the same food for several days. Rumors say this option just may become available, or atleast an option of cutting down the recepies to 2 servings.
Now that’s fresh mountain-grown birch oil from the hills of Dalarna.
Finally, this is a product I’ve been looking for…
…well no, but I love it.
We pick the leaves from the birch tree and extract the etherial oils that provide a very aromatic flavor of birch. Birch oil is then mixed with a cold-pressed organic canola oil and bottled.
It tastes spectacular mixed in butter, sprinkled on sallad or pasta, but make sure to apply it just before serving as the etherial birch oil is rather volatile and will disappear quickly if heated.
Some people have even been known to apply it as body lotion after the sauna, or so I’ve heard…
